Black Pepper Essential oil
is extracted from the plant
Piper nigrum of the
Piperaceae family. The oil is
made from the unripe red
fruit of the plant, while white
pepper for household use, is
made from the same fruit, but
the berry is picked when
fully ripe and the outside
layer (pericarp) is removed
before drying.
Pepper is one of the most
important and oldest of the
spices. The Greeks as far
back as the fourth century BC
knew about it. The Romans
valued it highly for its
aromatic and spice properties
and imported large quantities
from the East.
The pepper fruit is red
colour when ripe. A vine has
to be between six and seven
years old before a crop can
be harvested. Black pepper is
the dried, whole, unripe fruit
of this plant, white pepper
consists of the ripe fruit from
which the dark hull has been
removed.
On steam distillation
crushed black pepper yields
from 1 to 2.6 per cent
(depending on the age of the
peppercorns) essential
oil.
