Orange flower water is a clear, perfumy distillation of fresh bitter-orange blossoms, this hydrolat is used in many Mediterranean dessert dishes, and in some cocktails, such as the Ramos Gin Fizz. It is most often used in Middle Eastern cooking, but is being seen more in Western cooking.

Orange flower water is nearly colourless, though often of a pale yellowish tint and is largely made in Italy and France, where the flowers of the bitter orange have long been preferred as yielding the most fragrant product.
